In my French cooking class, we learned how to make the Thomas Keller inspired Ratatouille from the movie. I'm not much of a vegetable guy, but this is a great dish that I could eat every day. The key is the peperade that lies under the veggie display, and the key to the veggie display is a very good mandolin. I just bought a new one, and LOVE it. It's best if you can find Japanese Eggplant, Zucchini, Squash, and Tomatoes of the same diameter.

Ratatouille
